( Hu Tao's Specialty Dish)


( Hu Tao's Specialty Dish's Base Dish I accidentally made this one, but it's the same thing to be honest. Just decorated differently.)

Hu Tao's specialty. The round-faced ghouls seem quite cute, squeezed into a pile as they are. But if you were to fall to temptation and try but one of them, you may yet come to regret it for a long while... After all, this plate is full of top-quality, taste-bud-blasting—Actually, what on earth is this stuff, anyway?


 

Ingredients


Braised Mushrooms


3 Oz Dried Wide Shitake Mushrooms

2 Tbsp Oyster Sauce

2 Tsp Dark Soy Sauce

1 Tbsp Light Soy Sauce

2 Tsp Sugar

1/2 Tsp Salt

1 Tsp MSG

1 1/2 Tsp Shaoxing Cooking Wine

1 Tsp Cornstarch

6 Cups Water

5 Slices Ginger

3 Cloves Garlic

1 Chopped Scallion

1 Tsp Sesame Oil



Broccoli

1 lb Broccoli

Instructions


Prepare the dried shiitake mushrooms by soaking them in a bowl of warm water for 30 minutes.



Prep the broccoli by cutting out the florets in thicker individual pieces. Slice the ginger smash the garlic and chop the scallions.


Squeeze the liquid out of the mushrooms like a sponge. Cut the stems off of the mushrooms and set to the side. Once all of the excess liquid is out of them save the stock it will be useful later.


Prepare the sauce by combining oyster sauce , light soy sauce dark soy sauce , sugar , salt, MSG and cooking wine. Mix well.


Boil water in a sauce pan then blanch the broccoli. Boil the broccoli for 1- 1.5 minutes then immediately take the broccoli out and put ice water.


Heat up a wok on low then add oil and the ginger scallions and garlic. Low fry them until fragrant or untiul they brown.


Add the mushrooms and stir-fry until fragrant, or 50-60 seconds then add cooking wine . Add 2 cups of the mushroom soaking liquid to start braising the mushrooms.

Add the sauce and turn the heat up to high to bring everything to a boil. Once it comes to a boil, turn the heat to low and braise the mushrooms on low heat for 10-15 minutes.


Test the mushrooms are done by piercing them with a chopstick if the chopstick goes through easily. The mushrooms are done. Take the mushrooms out and plate them with the broccoli.


Continue boiling the braising liquid. Add MSG, Sesame oil and a cornstarch slurry. Continue simmering on low. Taste the sauce then pour the sauce over the dish.
